Project 365 – Day 171

day171-5We went on annual trek up to Graves Mountain for their apple festival. We all had a blast and I even picked up a Christmas decoration for the house from one of the vendors. It’s definitely a long day of driving, but well worth it for the memories.day171-1 day171-2 day171-3 day171-4

Project 365 – Day 169

day169-2This weekend is the last days of the Butterflies LIVE! exhibit at Lewis Ginter. I tried to get over there last night but unfortunately traffic was not my friend. Thankfully I was able to scoot over there this morning before it got too hot out. day169-1 day169-3 day169-4

Project 365 – Day 168 – BBQ Glazed Meatballs

day168-1Ingredients:

  • 2 eggs
  • 2/3 cup milk
  • 1 1/4 cups soft bread crumbs
  • 1 tbls prepared horseradish
  • 1 1/2 lbs ground beef
  • 1 cup water
  • 1/2 cup ketchup
  • 1/2 cup chili sauce
  • 1/4 cup maple syrup
  • 1/4 cup soy sauce
  • 1 1/2 tsp ground allspice
  • 1/2 tsp ground mustard

Directions:

  1. Preheat oven to 375F. In a bowl, beat eggs and milk. Stir in bread crumbs and horseradish. Crumble beef over mixture and mix well. Shape into 1 1/2in balls.
  2. Place meatballs on a greased rack in a shallow baking pan. Bake for 15-20 mins.
  3. In a large saucepan, combine the remaining ingredients. Bring to a boil; add the meatballs. Reduce heat; cover and simmer for 15 minutes or until heated through, stirring occasionally.
