This weekend is the last days of the Butterflies LIVE! exhibit at Lewis Ginter. I tried to get over there last night but unfortunately traffic was not my friend. Thankfully I was able to scoot over there this morning before it got too hot out.
Project 365 – Day 168 – BBQ Glazed Meatballs
- 2 eggs
- 2/3 cup milk
- 1 1/4 cups soft bread crumbs
- 1 tbls prepared horseradish
- 1 1/2 lbs ground beef
- 1 cup water
- 1/2 cup ketchup
- 1/2 cup chili sauce
- 1/4 cup maple syrup
- 1/4 cup soy sauce
- 1 1/2 tsp ground allspice
- 1/2 tsp ground mustard
Directions:
- Preheat oven to 375F. In a bowl, beat eggs and milk. Stir in bread crumbs and horseradish. Crumble beef over mixture and mix well. Shape into 1 1/2in balls.
- Place meatballs on a greased rack in a shallow baking pan. Bake for 15-20 mins.
- In a large saucepan, combine the remaining ingredients. Bring to a boil; add the meatballs. Reduce heat; cover and simmer for 15 minutes or until heated through, stirring occasionally.

I’m not feeling all that good today, so these are the kind of photos that I produced. I’m really quite fine with that. I still did what I was suppose to do and I got the rest I need.

We took Liam bowling for the first time today. He had a great time overall but about midway through the 2nd game he got a little tired.

It’s another cold and wet day here so Liam wanted to make a little project. This was 100% his idea and he did about 99% of the work (we had to cut out the leaves). I’m so proud of this little guy!

Today was a cold and wet day here, and I’m not just talking about the weather. However that isn’t going to stop us from smiling.

We travelled to the State Fair this afternoon for some fun and good food. I’m really happy that Liam decided to go on the “bouncing ride” again this year. It just so happens that he’s wearing the same shirt he did last year so it looks like these pictures aren’t really new. Oh well. He had a ball just like last time.
