We got to build a snowman today! I really didn’t think it was going to happen for Liam. The snow was just too powdery, but we found a patch that had mixed with the sleet and we were able to get it done. Liam was extremely happy to have a snowman from all this snow. We have about 15-18 inches on the ground right now. I hope you guys aren’t sick of all the snow photos the last 3 days. I will hopefully have something different tomorrow, if we can get out of the house!!
Project 365 – Day 275
Snowpocalypse day two. The snow was coming down even harder today. I think we got more accumulation today than yesterday. Not to mention the wind was just awful. Liam and I got outside for about 45 minutes and then we both had enough. Thankfully he took about an hour nap today. I think playing out in 7.5 inches of snow (and that was at lunch time, there’s more now!) really wore him out. I’m really hoping tomorrow will be the perfect balance of cold and warmth so we can enjoy the snow as a family. And hopefully there will be no more snow falling from the sky.
Project 365 – Day 274
We’re getting a pretty good dose of snow today and tomorrow. They have been talking about this storm for the last week and it actually came. There’s about 6 inches or so on the ground now and it’s still falling like crazy. It will be interesting to see how much we get by tomorrow night. I’m so so happy that Liam is just loving the snow this year. He didn’t want to come in tonight even though it was freezing! I’m so glad we got him his snow pants and boots!
Short Rib Pot Pie
We’re suppose to get this massive snow storm starting tomorrow. No big deal. It’s just 12-18 inches of snow. In Richmond. What’s the worst that can happen? Oh that’s right, we could be stuck at home for the next few days. Thankfully I have us covered in the food department.
A couple weeks ago I had made some short ribs in the slow cooker and they were delicious. I didn’t just want to reheat the leftovers, I wanted to create something new. That’s when I came across the idea of making them into a pot pie. All the ingredients were right there in the leftovers. The only thing that was left to make was the crust and add in some peas. The result was divine.
While everyone else is feasting on their eggs, milk and bread, we will be indulging in short rib pot pie. A perfect meal for the cold winter weather.
Short Rib Pot Pie
Ingredients
- Leftover short ribs or pot roast w/ gravy
- 1 9-inch pie crust recipe
- 1 cup peas
- 1 egg
Directions
- Preheat oven to 400F.
- Shred the leftover short ribs or pot roast and place it in a 1.5qt casserole dish. Add any vegetables that the ribs or roast may have cooked with. Add the peas. Cover everything with the gravy and mix to combine.
- Roll out the pie dough about 1 inch wider than your casserole dish. Then fold the excess over and flute the edge. Place the pie dough on top of the filling. Cut 4 slits in the top. Brush it with the egg wash.
- Bake for 40 mins or until the crust is golden and the filling is bubbling. Allow to rest for 10-15 minutes before serving.

It’s snowing!! Liam was very excited to go out and FINALLY be able to use his winter gear that he got for Christmas. There’s even more snow on the ground now than when we were outside. I’m so glad he liked being outside and throwing snowballs. Now we just need to work on getting him to like hot chocolate!

Liam was able to purchase a new Lego set today with his chore money. He was quite proud of it when it was all finished.
